I’m just popping in as usual on Saturday morning to share my meal planning and prep from the past week! Our Whole30 ended on Tuesday, so of course for Rob that meant buying chocolate chip cookies on Sunday in preparation for the big day when he could eat sugar again. I’ll admit that I bought a bar of dark chocolate as my “indulgence” this week. I didn’t want to bake last weekend and then not be able to eat it while it was fresh!
So here was our meal plan for last week:
Sunday: Paleo Turkey Chili
Monday: Salmon, baked potatoes, broccoli/cauliflower/carrot mix
Tuesday: Rosemary Chicken with Zucchini
Wednesday: Burgers, sweet potato fries, green beans
Thursday: Paleo meatballs with spaghetti squash and spinach
Saturday: Celebrating Rob’s sister’s baby shower!
Breakfasts: Egg, bacon, and veggie frittata
Lunches: Leftovers, salads with grilled chicken or steak, roasted veggies
Other: plantain chips, fruit, baby carrots, almond butter. Oh and chocolate chip cookies and dark chocolate:)
Here is what I prepped last weekend:
-cooked 2 batches of meatballs to freeze
-roasted spaghetti squash (also froze it since it was for later in the week)
-cooked steak for salads
-Rob grilled chicken on indoor grill
-washed and slices cucumber and pepper
-washed and store berries
-roasted sweet potatoes, butternut squash, zucchini and broccoli
-made plantain chips
-baked 2 potatoes
I did most of the prep last Saturday but saved a few things for Sunday which was less overwhelming. Isn’t it kind funny how our meal plan pretty much looks exactly the same even though the Whole30 is over? Maybe I’ll get back to baking paleo treats again one of these days.
