Meal Planning and Prep 11/2-11/8

I spread out this week’s meal planning and prep quite a bit. On Friday night we figured out our meal plan and ordered groceries online to be picked up Saturday. I was too exhausted from my long run on Saturday to do all the meal prep, so I just did a few things like cutting some of the veggies and cooking the steak. I did the rest on Sunday after Rob grilled the chicken on our indoor grill. Our meals weren’t too exciting this week, but ended up being good anyway!

Meal Plan Week Of 11/2-11/8:

Sunday: salmon, roasted broccoli, roasted red potatoes

Monday: burgers, sweet potato fries, green beans

Tuesday: paleo taco salad 

Wednesday: meatloaf, baked potatoes, broccoli and cauliflower

Thursday: one pot paprika chicken thighs

Friday: turkey meatballs, pasta for rob, potato for me, and salad

Saturday: Out

Breakfasts: Smoothies, eggs, maple raisin acorn squash pancakes

Lunches: Salads with grilled chicken and steak, leftovers

Snacks: Almond butter muffins, grain free cookies

Meal Prep:

-washed and stored berries

-made pancakes

-baked almond butter muffins

-sliced cucumbers

-baked cookies

-grilled chicken

-chopped green bell peppers

-made taco salad seasoning

-cooked steak

-cut up broccoli

-slices and sautéed zucchini

This week wasn’t too busy, so I had a little more time after work to do things like slice the sweet potatoes, make the meatloaf, etc. There are certain things I don’t like to do too far in advance so I make sure I will have time the night of the meal to get it done!

  1. Sometimes on the weekends I will chop up the vegetables but most of the time, I don’t. I should though! On occasion I make quinoa/lentils or a ziti for the week. I should really consider making something this weekend but I am so bad with the meal prep. I never know what we may be in the mood for and since I am a vegetarian and my son isn’t, it’s lots of deciding for two people’s meals.

    1. That gets really tricky. I’ve been getting frustrated with our Friday night dinners lately because my husband still wants to eat pasta and turkey meatballs before a long run but I’ve been preferring grilled chicken and a potato. At least we both eat salad with our meals, but its a lot of work and a big mess to make two different meals!

    1. My only issue with meatloaf is that it takes a while to cook. But I love the leftovers! And I liked the version I made this week that added spinach and doesn’t use bread crumbs like the version I used to make!

    1. They were really good, although I didn’t have a big enough pan so I ended up using two and combining them at the end…so it wasn’t really “one pot” but still pretty easy to make! Leftovers are the best:)

    1. I actually used someone else’s recipe for the taco salad (the link is in my post) but its really good! I like making my own taco seasoning now rather than buying the packaged stuff!

    1. Very true! I try to think about that when I am planning my meals. If I know I don’t want to do stuff for a certain meal in advance, I’ll plan it for a day when I have more time.
