Today I thought I would share my meal planning and prep from last weekend, which included a few new and delicious recipes.
Meal Plan Week of 2/28-3/5:
Sunday: Stuffed Bell Peppers
Monday: Chicken Parmesan Baked Ziti
Wednesday: Butternut Squash with Ground Beef and Onions
Thursday: Tacos (a perfect meal for Thursdays when I am out of energy for cooking!)
Friday: Salmon, Cous Cous, Asparagus
Breakfasts: Bacon and sweet potato frittata, smoothies
Here is the prep I did over the weekend:
-cut up veggies
-made baked ziti
-cut up chicken (Rob grilled some of it later in the weekend)
The fudge cups get their own picture because they were in the freezer when I took the pic of everything else!
