Last Weekend’s Meal Planning and Prep

Today I thought I would share my meal planning and prep from last weekend, which included a few new and delicious recipes.

Meal Plan Week  of 2/28-3/5:

Sunday: Stuffed Bell Peppers

Monday: Chicken Parmesan Baked Ziti

Tuesday: One Pan Honey Garlic Chicken and Veggies

Wednesday: Butternut Squash with Ground Beef and Onions

Thursday: Tacos (a perfect meal for Thursdays when I am out of energy for cooking!)

Friday: Salmon, Cous Cous, Asparagus

Saturday: Out

Breakfasts: Bacon and sweet potato frittata, smoothies

Snacks/Desserts: Oatmeal Blueberry Chocolate Chip Muffins and Honey Almond Fudge Cups

Here is the prep I did over the weekend:

-cooked frittatas

-cut up veggies

-baked muffins

-made baked ziti

-cut up chicken (Rob grilled some of it later in the weekend)

-made fudge

The fudge cups get their own picture because they were in the freezer when I took the pic of everything else!

  1. You are so organized with your meal planning! You also take nice pictures. If I displayed that food on my counter like that my little Chrissy boy would be up there in a SECOND trying to run away with a piece of chicken! Ah, life with cats! :) The best thing I ate this week… hmmm I made chicken noodle soup last weekend and it was good! I actually made too much and had to give some away.

  2. If we go out to eat, we typically go on weekends but we’ve been trying not to eat out as much. I sometimes will buy lunch out once a week, and today we’re going to a local Peruvian chicken place–so good!

  3. Isn’t that organized feeling THE BEST?!?! I tried stuffed peppers from Costco about a month ago and surprised myself with how much I liked them! The next task? Making them on my own. YIKES. I’m askeered.

  4. Your prep looks fantastic! I’m very new to prep and still quite shaky but something is better than nothing, right? I made some shrimp kabobs this week that were pretty tasty. Also an egg/veggie strata that I’ll be sharing on the blog.
